In Thunderbird's Engimail it is possible to set --no-version:
extensions.enigmail.agentAdditionalParam;--no-version

This feature is useful for privacy since the GPG headers can determine GPG version, Linux kernel version, and other revealing meta-data. 

A simple checkbox or ability to add custom parameters to be passed to the GPG binary from the UI will fix this issue.

Just do that in your gpg.conf.
